  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp lime juice
  • Optional toppings: sour cream, shredded cheese, diced avocado, chopped cilantro
  • Crispy tortilla toppers: store-bought tortilla strips or homemade, lightly fried tortilla pieces

Instructions

  1. Dice the onion, mince the garlic, and shred the cooked chicken. If making tortilla toppers from scratch, cut tortillas into strips or small pieces.
  2. Heat a large pot over medium heat. Add a drizzle of olive oil, then sauté the onion until translucent (about 5 minutes). Stir in the garlic and cook for another minute.
  3. Stir in the cumin, oregano, smoked paprika, salt, and pepper. Add the green chilies and mix well.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Stir in the white beans and shredded chicken. Let it simmer for 10 minutes to meld the flavors.
  6. Add the softened cream cheese, stirring until it melts and blends into the chili. For a smoother texture, use an immersion blender to puree part of the chili, leaving some beans and chicken chunky.
  7. Stir in the lime juice to brighten the flavors.
  8. Heat a small amount of oil in a skillet and fry tortilla strips until golden and crispy. Drain on paper towels and sprinkle lightly with salt.
  9. Ladle the chili into bowls and top with crispy tortilla strips, sour cream, shredded cheese, avocado, and cilantro as desired.
