These crispy air fryer sweet potato fries are tossed with rosemary and corn starch for a perfect crunchy texture and tender inside. A quick, easy, and flavorful homemade snack or side dish.

Ingredients

Scale
  • 2 medium sweet potatoes (about 1 pound / 450 grams), peeled and cut into 1/4-inch thick fries
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 tablespoon corn starch (can substitute arrowroot powder)
  • 1/2 teaspoon garlic powder (optional)
  • 3/4 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Peel and cut 2 medium sweet potatoes into 1/4-inch thick fries (about 6-7 inches long). Keep pieces uniform for even cooking.
  2. Place the cut fries on a clean kitchen towel or paper towels and pat them dry to remove excess moisture.
  3. Transfer the dried fries into a large mixing bowl. Sprinkle 1 tablespoon corn starch over them and toss well to coat each fry lightly but evenly.
  4. Drizzle 1 1/2 tablespoons olive oil over the fries. Add 1 tablespoon finely chopped fresh rosemary, 1/2 teaspoon garlic powder (optional), 3/4 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper. Toss everything together until well coated.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Place the fries in a single layer in the air fryer basket. Avoid overcrowding; work in batches if necessary.
  7. Air fry for 15-18 minutes, shaking the basket or flipping fries halfway through cooking. Fries should be golden brown, crispy on the edges, and tender inside.
  8. Remove fries from the basket and taste. Adjust salt or add an extra sprinkle of rosemary if desired. Serve immediately for best texture.

Notes

Dry the sweet potatoes thoroughly before coating with corn starch to ensure crispiness. Avoid overcrowding the air fryer basket to allow proper air circulation. Shake or flip fries halfway through cooking for even browning. Cooking times may vary by air fryer model; watch closely after 12 minutes to prevent burning. For gluten-free, use certified gluten-free corn starch or arrowroot powder. Optional: add smoked paprika or cayenne for a spicy twist.
