  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or brown sugar
  • Sriracha or chili garlic sauce, optional and to taste
  • 1/2 cup chopped water chestnuts, optional
  • A handful fresh cilantro or basil, chopped
  • Crushed peanuts or cashews, optional for garnish

Instructions

  1. Wash and separate lettuce leaves carefully to keep them whole. Shred carrots, dice bell pepper, slice green onions, mince garlic, and grate ginger. Chop water chestnuts if using. Set veggies aside.
  2. In a small bowl, combine soy sauce, sesame oil, rice vinegar, honey, and a splash of sriracha if desired. Stir until honey dissolves.
  3. Heat a large skillet over medium-high heat. Add a teaspoon of oil if needed, then add ground turkey. Break it up with a spatula and spread evenly in the pan. Let cook undisturbed for 2-3 minutes to develop crispiness, then stir and continue cooking until browned and cooked through, about 10-12 minutes total.
  4. Add garlic, ginger, red bell pepper, and water chestnuts if using. Stir-fry with turkey until veggies soften slightly but remain crunchy, about 5 minutes.
  5. Pour the sauce over the turkey mixture and stir well to coat evenly. Cook for another minute to meld flavors and thicken sauce slightly.
  6. Remove from heat and stir in green onions and fresh herbs.
  7. Spoon the turkey mixture into each lettuce leaf. Sprinkle with crushed peanuts or cashews if desired and serve immediately.
