  • 12 slices thin-cut bacon, sliced in half lengthwise
  • 2 tablespoons maple syrup (optional but recommended)
  • 1 tablespoon brown sugar
  • Pinch of ground black pepper
  • 1/2 teaspoon garlic powder
  • Optional: dipping sauces like honey mustard, barbecue sauce, or spicy sriracha mayo

Instructions

  1. Preheat oven to 400°F (205°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. In a mixing bowl, combine little smokies with garlic powder, black pepper, and brown sugar. Toss to coat evenly.
  3. Wrap each little smokie tightly with a half slice of bacon, overlapping slightly to secure.
  4. Place bacon-wrapped smokies seam side down on the wire rack.
  5. Brush each smokie lightly with maple syrup using a pastry brush.
  6. Bake for 20–25 minutes, flipping halfway through and brushing again with maple syrup to ensure even caramelization.
  7. Check for doneness: bacon should be crisp and golden, smokies heated through. Optionally broil 1–2 minutes to crisp any softer spots, watching carefully.
  8. Serve warm with your favorite dipping sauces.

Use thin-cut bacon for best crispiness and to avoid overpowering the smokies. Wrapping bacon tightly and flipping halfway through baking helps prevent curling and ensures even cooking.
