  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced
  • 1/4 cup bacon bits (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and scrub the potatoes thoroughly. Peel them if desired, but the skins add extra texture and flavor.
  3. Slice the potatoes into rounds about 1/4 inch (6 mm) thick, ensuring even slices for consistent cooking.
  4. In a large mixing bowl, toss the potato slices with olive oil, salt, pepper, and garlic powder until evenly coated.
  5. Arrange the slices in a single layer on the prepared baking sheet, avoiding overlap.
  6. Bake in the preheated oven for 20 minutes. Flip the slices and bake for another 15-20 minutes, or until golden brown and crispy.
  7. Remove the baking sheet from the oven and sprinkle shredded cheddar cheese over the potato slices. Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.
  8. While the potatoes are baking, prepare your toppings by chopping the green onions and cooking bacon if using.
  9. Once the potatoes are ready, let them cool for a minute before garnishing with sour cream, green onions, and bacon bits. Serve immediately.

Notes

For even slices, use a mandoline slicer. Keep an eye on the cheese during the final bake to prevent burning. Serve fresh for the best texture.
