A quick and easy one-pan meal featuring crispy bacon and golden, caramelized cabbage with a perfect balance of savory and slightly sweet flavors.

  • 6 slices thick-cut bacon, diced
  • Half a medium green cabbage, cored and thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon apple cider vinegar (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Dice the bacon into small pieces (about ½ inch). Thinly slice the cabbage into ¼-inch thick ribbons. Slice the onion thinly and mince the garlic.
  2. Heat a large cast iron skillet over medium heat. Add the bacon pieces and cook until crisp and fat is rendered, about 6–8 minutes. Stir occasionally. Remove bacon with a slotted spoon to a paper towel-lined plate, leaving the fat in the skillet.
  3. Add the sliced onion to the skillet with the bacon fat. Cook for 3–4 minutes, stirring frequently, until softened and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add the sliced cabbage to the skillet. If the pan looks dry, drizzle with olive oil. Stir to combine and spread cabbage evenly. Let cook undisturbed for about 4 minutes to brown the bottom.
  5. Flip the cabbage in sections using a spatula. Continue cooking and stirring occasionally for another 8–10 minutes until cabbage is tender with crispy, golden edges.
  6. Return the cooked bacon to the skillet and stir through the cabbage. Season with salt (sparingly), black pepper, red pepper flakes if using, and apple cider vinegar. Cook for another minute to meld flavors.
  7. Taste and adjust seasoning if needed. Serve warm immediately.

Notes

Do not overcrowd the pan to ensure cabbage crisps instead of steams. Let cabbage sit undisturbed to develop a golden crust before flipping. Use thick-cut bacon for better texture and flavor. Adjust salt carefully as bacon is already salty. Reheat leftovers gently in a skillet to maintain crispiness.
