A quick and easy breakfast casserole featuring crispy hash browns, gooey cheese, and fluffy eggs, perfect for busy mornings or brunches.

Ingredients

Scale
  • 4 cups frozen shredded hash browns
  • 6 large eggs, room temperature
  • 2 cups shredded cheddar cheese (or mix of cheddar and Monterey Jack)
  • 1 cup whole milk or 2%
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons melted butter
  • Optional: 1 cup diced cooked bacon or sausage
  • Optional: chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together eggs and milk until fully combined and slightly frothy.
  3. Stir in onion powder, garlic powder, salt, and black pepper to taste.
  4. Gently fold in the shredded hash browns, draining any excess moisture beforehand.
  5. Add shredded cheese and optional cooked bacon or sausage, folding gently to combine.
  6. Pour mixture into prepared baking dish and spread evenly.
  7. Drizzle melted butter over the top.
  8. Bake uncovered for 40-45 minutes until the top is golden brown and eggs are set. Tent with foil if edges brown too quickly.
  9. Let casserole rest for 5-10 minutes before slicing and serving.
  10. Optional: Broil for last 2-3 minutes for extra crispy edges, watching closely to prevent burning.

Notes

Pat frozen hash browns dry before mixing to avoid sogginess. Fold ingredients gently to keep texture. Let casserole rest before slicing for best results. Broil briefly for extra crispy edges if desired. Can be made ahead and refrigerated overnight before baking.
