Instructions

  1. Peel and devein shrimp, then pat dry thoroughly with paper towels.
  2. In a shallow bowl, combine 1/2 cup all-purpose flour, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon garlic powder; stir well.
  3. Beat 2 large eggs in a separate bowl until smooth.
  4. In a third bowl, mix 1 cup shredded sweetened coconut with 1 cup panko breadcrumbs.
  5. Dredge each shrimp in the seasoned flour, tapping off excess, then dip into the egg wash, and press into the coconut-panko mix to coat completely.
  6. Preheat air fryer to 400°F (200°C) for 3-5 minutes.
  7. Place shrimp in a single layer in the air fryer basket without touching; spray lightly with cooking spray.
  8. Air fry at 400°F (200°C) for 8-10 minutes, flipping halfway through, until golden brown and shrimp are opaque and firm.
