Crispy Cranberry Brie Bites

Quick and easy homemade puff pastry appetizers featuring flaky pastry, creamy Brie cheese, and tangy cranberry sauce, perfect for holiday parties and casual gatherings.

  • 1 sheet puff pastry, thawed
  • 8 ounces Brie cheese, rind removed and cut into small cubes
  • 1/2 cup cranberry sauce (whole berry preferred)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • Honey, for drizzling
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface to smooth out creases. Cut into 16 equal squares, about 2.5 inches each.
  3. Gently press each square into the wells of a mini muffin tin or fold the edges up slightly on a baking sheet to form shallow cups.
  4. Place a cube of Brie (about 1/2 inch) into the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce.
  5. Lightly brush the exposed edges of the pastry with beaten egg to seal and give a golden finish.
  6. Bake for 15-18 minutes or until the pastry is puffed and golden and the Brie is melted and bubbly. Check after 12 minutes to avoid over-browning.
  7. Remove from oven and sprinkle with chopped fresh rosemary and a light grind of black pepper. Let cool for 5 minutes.
  8. Arrange on a platter and drizzle a small amount of honey over each bite before serving.

Notes

Keep puff pastry cold until ready to bake to prevent stickiness. Do not overload cranberry sauce to avoid soggy pastry. Let bites rest 5 minutes after baking to allow cheese to set. Egg wash is essential for a golden, crispy crust. Can be made ahead and refrigerated up to 24 hours before baking; add extra baking time if baking from chilled.
