  • 1/4 cup Parmesan cheese, finely grated (optional)
  • Pinch of paprika (optional)

  • Non-stick cooking spray or parchment paper (for baking)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. Shred 8 ounces (225 grams) of sharp cheddar cheese finely using a box grater.
  3. In a bowl, combine the shredded cheddar with 1/4 cup (25 grams) grated Parmesan (if using), 1 to 2 tablespoons of everything bagel seasoning, a pinch of paprika, and a few cracks of black pepper. Stir gently to distribute evenly.
  4. Using a small spoon or cookie scoop, drop tablespoon-sized mounds of the cheese mixture onto the parchment, spacing them about 2 inches (5 cm) apart. Flatten each mound slightly with the back of the spoon to form thin discs around 2 to 3 inches (5 to 7.5 cm) wide.
  5. Bake for 8-12 minutes until the edges are golden brown and the centers look set but not burnt. Keep an eye on them around the 8-minute mark as ovens vary. The crisps will harden more as they cool.
  6. Let the crisps cool completely on the baking sheet for about 5 minutes to crisp up fully and make them easier to handle without breaking.
  7. Serve immediately or store in an airtight container at room temperature for up to 3 days.
