  • 1 avocado, sliced or mashed
  • Lime wedges, for squeezing
  • 8 small corn or flour tortillas (warmed before serving)
  • Shredded cheese (cheddar or Mexican blend), optional
  • Sour cream or Greek yogurt, optional
  • Hot sauce or salsa, to taste

Instructions

  1. Wash and dry all fresh produce. Shred the lettuce finely, dice the tomatoes, onions, and cucumbers, chop the cilantro, and slice or mash the avocado. Set aside in separate bowls for easy assembly. (Approx. 10 minutes)
  2. Place a large non-stick or cast iron skillet over medium-high heat and add the tablespoon of oil. Heat until shimmering but not smoking.
  3. Add the ground beef to the hot skillet. Break it up into small crumbles with a spatula. Spread it out evenly and cook undisturbed for 3-4 minutes to form a golden crust.
  4. Stir and continue cooking, stirring occasionally, until most moisture evaporates and beef is browned and crispy in spots, about 8-10 minutes total.
  5. Sprinkle chili powder, cumin, smoked paprika, garlic powder, salt, and pepper over the beef. Stir well and cook for another 1-2 minutes to bloom the spices. Drain excess grease if needed.
  6. Warm the tortillas on a dry skillet over medium heat for about 30 seconds per side or wrap in a damp paper towel and microwave for 20 seconds.
  7. Assemble the tacos by spooning crispy ground beef onto each warm tortilla. Top with shredded lettuce, diced tomatoes, onions, cucumber, cilantro, and avocado. Add cheese, sour cream, or hot sauce if desired.
  8. Squeeze fresh lime juice over the tacos just before eating.
