Instructions

  1. Toast ½ cup chopped walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant and golden. Set aside to cool.
  2. In a medium bowl, whisk together ½ cup cornstarch, ¼ cup all-purpose flour, ½ teaspoon salt, and 1 beaten egg until smooth and thick enough to coat shrimp.
  3. Pat shrimp dry with paper towels. Toss shrimp in the batter, ensuring each piece is fully coated.
  4. Heat about 3 cups vegetable oil in a deep pan or wok to 350°F (175°C).
  5. Fry shrimp in batches for 3-4 minutes until golden brown and crispy. Remove with a slotted spoon and drain on a wire rack or paper towels.
  6. In a small saucepan, gently warm 3 tablespoons honey, ¼ cup mayonnaise, and 2 tablespoons sweetened condensed milk over low heat. Stir until smooth and slightly thickened. Add 1 teaspoon lemon juice if desired.
  7. Place fried shrimp in a large bowl. Pour honey-mayo sauce over shrimp and toss gently to coat evenly.
  8. Sprinkle toasted walnuts over coated shrimp and toss lightly to combine.
  9. Serve immediately, garnished with sesame seeds or sliced green onions if desired.
