  • 1 large lemon, zested and juiced
  • 1/4 cup grated parmesan cheese (about 25 grams)

  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus by bending each stalk near the base until it snaps naturally to remove the woody end.
  3. In a mixing bowl, combine asparagus with olive oil, minced garlic, lemon zest, salt, and pepper. Toss well to coat evenly.
  4. Spread the asparagus in a single layer on the prepared baking sheet, leaving space between stalks.
  5. Roast in the oven for 12-15 minutes, flipping the stalks halfway through with tongs for even browning. Look for crisp, slightly charred tips.
  6. Remove the tray from the oven and immediately sprinkle grated parmesan over the hot asparagus to melt slightly.
  7. Squeeze fresh lemon juice over the asparagus right before serving.
  8. Gently toss and serve warm.
