A quick and easy appetizer featuring crispy fried roll-ups filled with a creamy ham mixture and tangy pickles, perfect for snacks or casual gatherings.

  • 10 small dill pickles or bread-and-butter pickles
  • 6 oz thinly sliced deli ham, finely chopped
  • 8 oz full-fat cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp freshly ground black pepper
  • Small or medium flour tortillas (6-8 inches diameter)
  • 1 large egg, beaten
  • 1 cup plain or panko breadcrumbs
  • About 2 cups vegetable or canola oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese and mayonnaise. Add garlic powder, onion powder, and black pepper. Mix until creamy and smooth.
  2. Fold finely diced ham into the cream cheese mixture and stir gently to combine. Set aside.
  3. Drain pickles well and pat dry with paper towels. Slice lengthwise into quarters if large.
  4. Lay out one flour tortilla and spread about 2 tablespoons of the creamy ham mixture evenly across the surface.
  5. Place 1-2 pickles along one edge, then roll the tortilla tightly around the pickles to form a log.
  6. Beat the egg in a small bowl. Pour breadcrumbs into a shallow dish. Dip each roll-up into the egg wash, then roll in breadcrumbs until fully coated. Press lightly to help crumbs stick.
  7. Heat about 2 cups of oil in a skillet over medium heat until shimmering (around 350°F).
  8. Carefully place roll-ups seam side down in hot oil. Fry until golden brown on all sides, about 3-4 minutes per batch, turning gently with tongs.
  9. Remove roll-ups with a slotted spoon and drain on paper towels. Let cool for a few minutes before serving.

Notes

Pat pickles dry thoroughly to avoid soggy coating. Use medium heat for frying to get a crispy crust without burning. Warm tortillas slightly if stiff to prevent cracking. Do not overcrowd the pan when frying. Drain roll-ups on paper towels to remove excess oil. For gluten-free option, use gluten-free tortillas and almond flour or gluten-free panko instead of breadcrumbs. Baking alternative: bake at 400°F for 15-18 minutes, turning halfway.
