  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (for cornstarch slurry, optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt, pepper, and paprika.
  2. Place sliced onion and minced garlic in the bottom of a 4-6 quart slow cooker. Arrange seasoned pork chops on top.
  3. In a medium bowl, whisk together cream of mushroom soup, chicken broth, Worcestershire sauce, soy sauce, and dried thyme. Pour the sauce evenly over the pork chops.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until pork is fork-tender and sauce is bubbling.
  5. If a thicker gravy is desired, remove pork chops to a plate and keep warm. Whisk together cornstarch and cold water, then stir the slurry into the crockpot. Cover and cook on HIGH for 15-20 minutes until thickened. Return pork chops to the pot to coat with gravy.
  6. Serve pork chops and onions with plenty of gravy, garnished with fresh parsley if desired.
