Instructions

  1. Preheat the oven to 425°F (220°C). Position a rack in the center. Butter two 6 oz (180 ml) ramekins generously and lightly dust with cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together: Place chopped bittersweet chocolate and softened butter in a heatproof bowl over simmering water (double boiler). Stir gently until smooth and fully combined, about 3-4 minutes. Remove from heat and let cool slightly.
  3. Whisk eggs and sugar: In a separate bowl, use a whisk or electric mixer to beat the eggs and granulated sugar until pale and thick, about 2-3 minutes. The mixture should be frothy and light.
  4. Combine mixtures: Slowly fold the melted chocolate mixture into the egg mixture, stirring gently but thoroughly to avoid deflating the eggs.
  5. Add flour, vanilla, and salt: Sift the flour over the batter and fold in carefully with a spatula until fully incorporated. Add vanilla extract and a pinch of salt, folding until smooth. Be careful not to overmix.
  6. Divide batter between ramekins: Evenly spoon the batter into the prepared ramekins, filling about 3/4 full.
  7. Bake: Place ramekins on a baking sheet to catch any drips. Bake for 12-14 minutes. The edges should be firm but the centers still slightly jiggly.
  8. Cool briefly and serve: Let the cakes rest for 1-2 minutes before gently inverting onto plates or serving straight in the ramekins. Dust with powdered sugar and add fresh berries or whipped cream if desired.
