A quick and easy indulgent yet wholesome cottage cheese bowl combining creamy cottage cheese, ripe banana, and rich dark chocolate for a nutritious breakfast, snack, or dessert.

  • 1 cup (240 ml) small-curd cottage cheese
  • 1 medium ripe banana, mashed
  • 1 oz (28 g) dark chocolate, chopped or chips (70% cacao or higher)
  • 1 tsp (5 ml) honey or maple syrup (optional)
  • ½ tsp (2.5 ml) vanilla extract
  • 2 tbsp (15 g) chopped nuts (walnuts or almonds, optional)
  • Pinch of cinnamon (optional)

Instructions

  1. Peel and mash 1 medium ripe banana in a mixing bowl with a fork or potato masher until mostly smooth, about 1-2 minutes.
  2. Add 1 cup (240 ml) small-curd cottage cheese to the mashed banana and stir gently to combine, about 1 minute.
  3. Add ½ teaspoon (2.5 ml) vanilla extract and a pinch of cinnamon if using. Stir to distribute flavors evenly. Add 1 teaspoon (5 ml) honey or maple syrup if extra sweetness is desired, about 30 seconds.
  4. Roughly chop about 1 ounce (28 g) of dark chocolate into small chunks using a sharp knife.
  5. Fold the chopped dark chocolate into the cottage cheese mixture or sprinkle on top. Optionally, sprinkle 2 tablespoons (15 g) of chopped nuts on top.
  6. Serve immediately. If chocolate softens too much, chill in the fridge for 5 minutes to firm up.

Notes

Use ripe bananas for natural sweetness and smooth mashing. For a smoother texture, blend banana and cottage cheese before adding chocolate. Keep cottage cheese cold until use to avoid watery texture. Toast nuts lightly for extra flavor but avoid overpowering the dish. Store leftovers covered in the fridge up to 24 hours and stir before serving. Not recommended to reheat.
