  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate: Place chopped bittersweet chocolate in a heatproof bowl over simmering water (double boiler). Stir gently until fully melted and smooth. Remove from heat and let it cool slightly while still fluid—about 5 minutes.
  2. Whip the cream: In a chilled mixing bowl, beat the heavy cream with an electric mixer on medium-high speed until soft peaks form, about 3–4 minutes. Set aside.
  3. Beat egg whites: In a separate clean bowl, whisk the egg whites with a pinch of salt until foamy. Gradually add sugar and continue whipping until stiff peaks form, about 5-7 minutes.
  4. Combine whiskey and vanilla: Stir the Irish whiskey and vanilla extract gently into the cooled melted chocolate.
  5. Fold chocolate into cream: Using a spatula, gently fold the chocolate mixture into the whipped cream with slow, sweeping motions.
  6. Fold in egg whites: Carefully fold the whipped egg whites into the chocolate-cream mixture in three additions until uniform in color.
  7. Chill the mousse: Spoon the mousse into serving dishes or ramekins. Cover and refrigerate for at least 2 hours or overnight to let flavors meld and texture set.
