  • 1 cup (225g) small-curd cottage cheese
  • 1 cup (about 150g) fresh strawberries, hulled and sliced
  • 34 medium-sized cookies, crumbled (vanilla wafers, shortbread, or sugar cookies)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Rinse 1 cup (150g) of fresh strawberries under cold water. Hull and slice into bite-sized pieces. Set aside.
  2. In a medium bowl, add 1 cup (225g) of small-curd cottage cheese. Stir in 1/2 teaspoon vanilla extract if using. For a smoother texture, whip lightly with a fork or hand mixer for 30 seconds.
  3. In a serving bowl or glass, spoon half of the cottage cheese as the base layer. Add half of the sliced strawberries on top.
  4. Crumble 1.5 to 2 cookies over the strawberries, then sprinkle 1/2 teaspoon chia seeds if using.
  5. Repeat layers with remaining cottage cheese, strawberries, cookies, and chia seeds.
  6. Drizzle about 1 tablespoon honey or maple syrup on top (optional).
  7. Serve immediately to keep cookies crunchy and strawberries fresh. Refrigerate up to 1 hour if needed.

Notes

Use small-curd cottage cheese for best texture. Add cookies just before serving to keep them crunchy. For dairy-free, substitute cottage cheese with thick unsweetened coconut yogurt. Thaw and drain frozen strawberries well to avoid watery bowl. Let cottage cheese sit at room temperature for 5 minutes before serving for creamier texture.
