  • 8 ounces mascarpone cheese, softened
  • 4 large eggs, room temperature
  • 1 ½ cups whole milk (or almond/oat milk for dairy-free)
  • ½ cup heavy cream (optional but recommended)
  • 1 tablespoon vanilla extract
  • ¼ cup maple syrup
  • 2 cups fresh or frozen mixed berries (blueberries, raspberries, strawberries, blackberries)
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Cube brioche or challah bread into roughly 1-inch pieces. If using frozen berries, toss them lightly with 1 tablespoon sugar and cinnamon to draw out flavor.
  2. In a large bowl, whisk mascarpone cheese until smooth. Add eggs, milk, heavy cream, maple syrup, vanilla extract, remaining sugar, cinnamon, and salt. Whisk until fully combined and silky without lumps. Use an electric mixer if needed.
  3. Gently fold cubed bread and berries into the custard mixture, ensuring bread is well coated but not falling apart. Let sit for about 10 minutes to soak.
  4. Pour mixture into a greased 9×13-inch baking dish. Spread evenly and press down lightly to submerge bread in custard.
  5. Cover and refrigerate for at least 4 hours or overnight for best flavor and texture, or bake immediately if short on time.
  6. Preheat oven to 350°F (175°C). Bake uncovered for 45-50 minutes until golden brown and set in the center. Cover with foil halfway if top browns too fast.
  7. Let bake rest for 5 minutes before serving to help it settle and make slicing easier.

Notes

Use day-old bread for best custard absorption and texture. Letting the bread soak for at least 10 minutes or overnight improves creaminess. If top browns too quickly, tent with foil. For crunch, add nuts or streusel topping before baking. Mascarpone can be swapped with cream cheese or dairy-free alternatives for different textures.
