  • 1 cup (240g) small-curd cottage cheese (low-fat or full-fat)
  • 1 minced garlic clove
  • 1 tablespoon chopped fresh basil or parsley
  • Salt and freshly cracked black pepper to taste
  • 1 teaspoon olive oil (for drizzling)
  • ½ cup (75g) halved cherry tomatoes
  • ¼ cup (40g) thinly sliced red onion (optional)
  • 1 cup (100g) shredded mozzarella cheese
  • ½ teaspoon olive oil (for drizzling on top)
  • Optional toppings: sliced olives, arugula, chili flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine cottage cheese, minced garlic, chopped herbs, salt, and pepper. Stir until evenly mixed. For a smoother texture, pulse in a food processor for 10-15 seconds.
  3. Place flatbread on a parchment-lined baking sheet. Drizzle with 1 teaspoon olive oil and spread evenly.
  4. Spread the cottage cheese mixture evenly over the flatbread, leaving a small border around the edges.
  5. Scatter halved cherry tomatoes and sliced red onion evenly on top.
  6. Sprinkle shredded mozzarella cheese over the toppings.
  7. Drizzle about ½ teaspoon olive oil over the top to encourage browning.
  8. Bake for 12-15 minutes until cheese is bubbly and golden and flatbread edges are crisp.
  9. Remove from oven and let cool for 2 minutes before slicing.
  10. Optional: Scatter fresh arugula or chili flakes on top before serving.
