  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries, rinsed and dried
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • Optional: 2 tablespoons apricot jam (warmed for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Beat in the egg and 2 teaspoons vanilla extract until fully combined.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, and salt. Gradually add to wet ingredients, mixing on low speed until just combined.
  4. Lightly grease a 9×13-inch baking pan or large round pizza pan. Press dough evenly into pan, smoothing surface to about ¼ to ½ inch thick.
  5. Bake for 18-22 minutes until edges are golden and center is set but still soft. Cool completely on a wire rack for 30-40 minutes.
  6. In a clean bowl, beat softened cream cheese until smooth. Add sifted powdered sugar and 1 teaspoon vanilla extract, mixing until combined.
  7. Whip cold heavy cream to soft peaks in a separate bowl. Gently fold whipped cream into cream cheese mixture until light and fluffy.
  8. Spread cream cheese topping evenly over cooled sugar cookie crust.
  9. Arrange prepared fruit on top as desired.
  10. Optional: Warm apricot jam until runny and brush lightly over fruit for glaze.
  11. Refrigerate assembled fruit pizza for at least 1 hour before slicing and serving.
