  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Prepare the marinade by whisking together olive oil, minced garlic, lemon juice, smoked paprika, honey, salt, black pepper, and red pepper flakes if using in a medium bowl.
  2. Add the peeled and deveined shrimp to the marinade, toss to coat evenly, cover, and let sit at room temperature for about 15 minutes. Do not marinate longer than 30 minutes.
  3. Preheat the grill to medium-high heat (about 400°F). Clean and lightly oil the grates to prevent sticking.
  4. Thread 4-5 shrimp per skewer, piercing through the tail and head end so they lie flat.
  5. Place the skewers on the grill and cook for 2-3 minutes per side until shrimp turn opaque and have grill marks. Avoid overcooking.
  6. Remove the skewers from the grill, sprinkle with chopped fresh parsley, and optionally squeeze extra lemon juice over the top.
  7. Serve immediately while hot.

Notes

Do not marinate shrimp longer than 30 minutes to avoid mushy texture. Use large shrimp for better texture. Preheat and oil grill grates to prevent sticking. Flip shrimp once halfway through cooking.
