  • 1 pound (450 grams) chicken breast, thinly sliced, boneless and skinless
  • 2 medium bell peppers, assorted colors (red, yellow, green), sliced
  • 1 large yellow or white onion, thinly sliced
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh lime juice
  • Fresh cilantro, chopped (optional, for garnish)
  • 8 small flour or corn tortillas, warmed

Instructions

  1. Slice the chicken breast into thin strips about ½ inch wide. Slice the bell peppers and onion into similar-sized strips.
  2. In a medium bowl, toss the chicken strips with lime juice, garlic powder, cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Mix well and let sit while heating the pan.
  3. Heat a large skillet or cast iron pan over medium-high heat and add olive oil. Wait until it shimmers but does not smoke.
  4. Add the marinated chicken strips in a single layer. Cook undisturbed for 2-3 minutes to sear, then toss occasionally until cooked through and slightly caramelized, about 5-7 minutes total.
  5. Push the chicken to one side of the pan and add the sliced peppers and onions. Stir occasionally while they soften but remain tender-crisp, about 7-8 minutes.
  6. Mix the chicken and veggies together in the pan. Taste and adjust seasoning with salt or pepper if needed. Cook for another 2-3 minutes to combine flavors.
  7. Warm the tortillas in a dry pan or oven wrapped in foil for 1-2 minutes.
  8. Serve the chicken and veggie mixture on warm tortillas. Garnish with chopped cilantro and an optional squeeze of lime.

Notes

Do not overcrowd the pan to avoid steaming instead of searing. Slice ingredients evenly for uniform cooking. Use fresh spices for best flavor. If chicken sticks, deglaze pan with a splash of water or chicken broth. Adjust heat to avoid burning spices.
