Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken into thin strips about ½ inch wide. Slice the bell peppers and onion similarly thin.
  3. In a large bowl, combine chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
  4. Add the chicken strips, sliced peppers, and onions to the bowl. Drizzle with olive oil and toss until evenly coated.
  5. Spread the mixture out in a single layer on a large rimmed baking sheet, avoiding overcrowding.
  6. Roast in the preheated oven for 20-25 minutes, stirring or flipping halfway through (around 12 minutes) for even cooking.
