  • 1/2 cup (100 grams) brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/2 cup (120 ml) water

Instructions

  1. Peel, core, and chop about 5 pounds (2.3 kg) of apples into roughly 1-inch chunks.
  2. Add the chopped apples, granulated sugar, brown sugar, cinnamon, cloves, allspice, lemon juice, vanilla extract, and water into the slow cooker.
  3. Stir everything well with a wooden spoon or heatproof spatula to evenly coat the apples with spices and sugars.
  4. Set the slow cooker to low and cover. Cook for 8 to 10 hours until the apples break down and caramelize.
  5. If awake, stir gently every 3-4 hours to prevent sticking, though this is optional.
  6. After about 8 hours, check for thickness. If too runny, cook for an additional 1-2 hours.
  7. Use an immersion blender to puree the apple butter to your desired consistency, or blend in batches with a regular blender and return to the slow cooker to warm.
  8. Pour the apple butter into sterilized jars or airtight containers. Let cool completely before sealing and refrigerating.
