  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, chopped
  • Cream cheese (Philadelphia recommended)
  • Dijon mustard
  • 1 medium cucumber, thinly sliced
  • 6 ounces (170g) smoked salmon, thinly sliced
  • 4 hard-boiled eggs
  • 2 tablespoons mayonnaise
  • Pinch of paprika
  • 1 cup (150g) cooked chicken breast, shredded
  • Fresh lemon juice, to taste
  • Salt and freshly cracked black pepper, to taste
  • Watercress or fresh dill for garnish
  • Capers (optional, rinsed)
  • Additional optional ingredients for variations: roasted red peppers, fresh mozzarella, basil, basil pesto, radishes, pea shoots, fresh tomatoes, apple slices, brie, cayenne pepper, horseradish spread

Instructions

  1. Trim crusts off bread slices to create classic finger sandwich look. Use about 12 slices for 6 sandwiches. (5 minutes)
  2. Make herb butter by mixing softened butter with chopped parsley and chives until smooth. Spread a thin layer on each bread slice to keep moist and add flavor. (5 minutes)
  3. Prepare fillings: thinly slice cucumber and pat dry; slice smoked salmon; mash hard-boiled eggs with mayo, salt, pepper, and paprika for egg salad; mix shredded chicken with mayo, lemon juice, salt, and pepper for chicken salad. (15-20 minutes)
  4. Assemble sandwiches by spreading cream cheese or Dijon mustard on bread slices not buttered. Layer chosen fillings evenly on half the slices, top with watercress or dill, then close sandwiches with remaining bread slices, butter-side down. (10 minutes)
  5. Cut each sandwich into 3 or 4 strips about 1 to 1.5 inches wide using a sharp serrated knife. Arrange neatly on serving platter. (5 minutes)
  6. Cover platter with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and bread firm up slightly (optional but recommended).

Notes

Use fresh, soft bread but not overly moist to avoid crumbling. Pat wet ingredients dry to prevent sogginess. Spread fillings and butter in thin, even layers. Chill sandwiches before cutting and serving for best shape and flavor melding. Prepare fillings ahead to save time. For dairy-free, use plant-based spreads and olive oil herb blend. Gluten-free bread can be used as substitute.
