  • 2 packages (3 oz each) berry-flavored gelatin (e.g., strawberry or raspberry)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup fresh or frozen mixed berries (optional, for texture and flavor)
  • Whipped cream (optional, for garnish)
  • Fresh mint leaves (optional, for garnish)
  • Extra berries (optional, for garnish)

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of your 9×13-inch baking dish to form the crust. Chill in the fridge while you prepare the next layer.
  2. Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the powdered sugar and vanilla extract, and mix until fully combined. Gently fold in the whipped topping until the mixture is light and fluffy. Spread the cheesecake layer evenly over the chilled crust, then return the dish to the fridge.
  3. Prepare the first jello layer: Dissolve one package of berry-flavored gelatin in 1 cup of boiling water. Stir until fully dissolved, then add ½ cup of cold water. Let the liquid cool slightly before pouring it over the cheesecake layer. If desired, scatter fresh or frozen mixed berries on top. Chill in the fridge for 2-3 hours, or until the jello is fully set.
  4. Add the second jello layer: Repeat the process with the second package of berry-flavored gelatin, layering it over the first jello layer. Chill again for another 2-3 hours, or until set.
  5. Garnish and serve: Before serving, top the dessert with whipped cream, fresh berries, and mint leaves for a festive finish. Slice into squares and enjoy!
