  • 4 bone-in pork chops (about 1 inch thick)
  • 1/4 cup packed light brown sugar
  • 3 cloves garlic, minced
  • 2 medium Granny Smith apples, cored and thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine 1/4 cup packed light brown sugar, 3 minced garlic cloves, 1 teaspoon dried thyme, 1 tablespoon apple cider vinegar, 2 tablespoons olive oil, and a pinch of salt and pepper. Stir until smooth and sticky.
  3. Pat 4 bone-in pork chops dry with paper towels. Season both sides lightly with salt and freshly ground black pepper.
  4. Using tongs or a spoon, coat each pork chop evenly with the brown sugar garlic mixture.
  5. Place the pork chops in a single layer in a 9×13-inch baking dish. Nestle the thinly sliced apples around and on top of the chops.
  6. Bake uncovered in the preheated oven for 30-35 minutes, until pork chops reach an internal temperature of 145°F (63°C) and the apples are tender but not mushy.
  7. Remove from oven and let the pork chops rest for 5 minutes.
  8. Serve warm with the baked apples spooned over the top.

Notes

Pat pork chops dry before seasoning to help the glaze stick better. Avoid overcrowding the baking dish to ensure proper caramelization. If glaze browns too quickly, cover loosely with foil halfway through baking. Use tart, firm apples like Granny Smith for best texture and flavor. Let pork rest 5 minutes after baking for juiciness.
