  • 1/2 cup buffalo wing sauce (120ml)
  • 1/3 cup blue cheese crumbles (75g)
  • 12 mini slider buns
  • 2 tablespoons unsalted butter, melted (28g)
  • Celery sticks, thinly sliced (optional)
  • Ranch or blue cheese dressing (optional, for drizzling)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Shred the chicken: Remove skin and shred about 3 cups (450g / 1 lb) of rotisserie chicken into bite-sized pieces, discarding bones and skin.
  2. Mix the buffalo sauce: In a large mixing bowl, combine shredded chicken with 1/2 cup (120ml) buffalo wing sauce, 1/2 teaspoon garlic powder, and a pinch of salt and black pepper. Toss until evenly coated.
  3. Melt butter and prep buns: Melt 2 tablespoons (28g) unsalted butter in a small saucepan or microwave. Spread butter on cut sides of 12 mini slider buns.
  4. Toast the buns: Heat a skillet or griddle over medium heat. Place buns cut-side down and toast for 2-3 minutes until golden brown. Remove and set aside.
  5. Assemble the sliders: Spoon buffalo chicken mixture onto bottom half of each toasted bun. Sprinkle about 1 teaspoon blue cheese crumbles on top of the chicken.
  6. Add celery and dressing (optional): Layer thin celery sticks over blue cheese and drizzle ranch or blue cheese dressing if desired. Top with bun halves.
  7. Serve immediately: Enjoy fresh while buns are warm and flavors vibrant. To keep warm, cover loosely with foil and place in a low oven (200°F / 95°C) for up to 15 minutes.

Notes

Keep blue cheese crumbles chilled until just before serving to maintain texture. Toast buns well with butter to prevent sogginess. Assemble sliders just before serving for best texture. Adjust buffalo sauce amount to avoid soggy chicken. Optional celery and dressing add crunch and creaminess.
