  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, softened
  • ½ cup grated Parmesan cheese (about 50 g)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice, freshly squeezed
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine softened butter, minced garlic, grated parmesan, chopped parsley, lemon juice, red pepper flakes (if using), and a pinch of salt and pepper. Stir until well blended.
  3. Add the peeled and deveined shrimp to the bowl, drizzle with olive oil, and mix gently to coat evenly with the garlic parmesan butter.
  4. Tear off four large sheets of heavy-duty aluminum foil (about 12×12 inches each). Divide the shrimp mixture evenly among the foil sheets, spreading it out in a single layer.
  5. Fold the foil over the shrimp and crimp the edges tightly to create sealed packets.
  6. Place the foil packets on a baking sheet and bake in the preheated oven for 12-15 minutes until shrimp are opaque and slightly curled.
  7. Carefully open one packet to check doneness. If shrimp are not fully cooked, reseal and bake for a couple more minutes.
  8. Transfer packets to plates and garnish with extra parsley and a wedge of lemon if desired. Spoon any buttery sauce from the packet over shrimp before serving.

Notes

Do not overcrowd the foil packets to ensure even cooking. Let shrimp rest in the foil for 2 minutes after baking to redistribute juices. Softened butter coats shrimp better than cold butter. You can prepare packets ahead and refrigerate for up to 24 hours, adding a few extra minutes to baking time if chilled. For grilling, cook foil packets on medium heat for 8-10 minutes.
