A quick and easy grilled shrimp recipe bursting with zesty lemon and garlicky flavor, perfect for weeknight dinners or casual gatherings.

  • 1620 large shrimp, peeled and deveined
  • Juice of 12 fresh lemons (about 3 tablespoons)
  • 34 garlic cloves, minced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Rinse large shrimp under cold water and pat dry with paper towels.
  2. In a mixing bowl, combine lemon juice, minced garlic, olive oil, salt, black pepper, and optional red pepper flakes. Whisk until well blended.
  3. Add shrimp to the marinade and toss gently to coat evenly. Cover and refrigerate for 15-20 minutes.
  4. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
  5. Thread 6-8 shrimp per skewer, leaving space between each shrimp.
  6. Grill shrimp skewers for 2-3 minutes per side until shrimp turn pink and opaque with light grill marks.
  7. Remove shrimp from grill, sprinkle with chopped parsley, and add an extra squeeze of lemon juice if desired. Serve immediately.

Notes

Pat shrimp dry before marinating to ensure a good sear. Marinate for 15-20 minutes only to avoid mushy texture. Watch shrimp closely while grilling; cook until they curl into a loose ‘C’ shape and turn opaque. Avoid overcooking to prevent rubbery shrimp. If using wooden skewers, soak them for at least 30 minutes to prevent burning.
