  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup chopped bell peppers (any color)
  • 1 cup chopped onion
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 3 tablespoons hot honey
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 1 teaspoon minced garlic
  • Salt to taste
  • Pepper to taste
  • Pinch of red chili flakes
  • Chopped green onions (for garnish)

Instructions

  1. Cook 2 cups of rice according to package instructions. Once cooked, fluff with a fork and set aside.
  2. In a small bowl, whisk together 3 tablespoons of hot honey, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of sriracha (optional for extra heat). Set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook for 6-8 minutes, breaking it apart with a wooden spoon, until browned and fully cooked. Season with salt, pepper, and a pinch of red chili flakes.
  4. Remove the cooked beef from the skillet and set aside. In the same skillet, add another tablespoon of olive oil. Toss in 1 cup of chopped bell peppers, 1 cup of chopped onion, and 1 cup of broccoli florets. Cook for about 5-7 minutes until slightly softened but still crisp.
  5. Return the cooked ground beef to the skillet and pour the hot honey sauce over the mixture. Stir well to coat everything evenly and cook for another 2-3 minutes to let the flavors meld.
  6. Divide the cooked rice into individual serving bowls. Spoon the beef and vegetable mixture over the rice. Sprinkle with chopped green onions and sesame seeds for garnish.
