Ingredients

Scale
  • 1 pound ground beef (80/20 for flavor and juiciness)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning blend (chili powder, cumin, smoked paprika, oregano, salt, pepper, pinch of cayenne)
  • 1 tablespoon tomato paste
  • 1/4 cup beef broth or water
  • Juice of 1 lime
  • 8 small soft corn or flour tortillas (about 6-inch diameter)
  • Fresh toppings:
  • – Shredded lettuce (iceberg or romaine)
  • – Diced tomatoes or pico de gallo
  • – Chopped cilantro
  • – Sliced radishes
  • – Shredded cheese (cheddar or cotija)
  • – Sour cream or crema (optional)
  • – Avocado slices or guacamole

Instructions

  1. Heat a large skillet over medium-high heat for about 2 minutes until hot but not smoking.
  2. Add 1 tablespoon of oil (vegetable or olive oil) and sauté the chopped onion for 3-4 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef to the skillet and break it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until fully browned and no longer pink.
  5. Sprinkle the taco seasoning evenly over the beef, then stir in the tomato paste. Mix well to coat the meat thoroughly.
  6. Pour in 1/4 cup beef broth or water, stir to combine, reduce heat to medium-low, and simmer for 5 minutes, stirring occasionally, until the mixture thickens slightly.
  7. Remove the skillet from heat and squeeze fresh lime juice over the beef mixture. Stir to brighten the flavors.
  8. While the beef simmers, wrap the tortillas in a clean towel and heat in a 350°F (175°C) oven for 5-7 minutes or warm individually in a dry skillet for 30 seconds each side.
  9. Prepare fresh toppings: shredded lettuce, diced tomatoes, cilantro, radishes, cheese, sour cream, and avocado in small bowls or on a platter.
  10. Assemble tacos by spooning warm beef mixture onto each tortilla and piling on fresh toppings. Serve immediately.

Notes

Do not overcrowd the pan when browning beef to get good caramelization. Use fresh garlic and onion for best flavor. Add seasoning gradually for full flavor development. Simmer with broth or water to keep meat moist. Fresh lime juice at the end brightens the dish. Toast tortillas briefly to add subtle crunch and prevent tearing. Prep toppings ahead to save time. Tomato paste is essential for depth of flavor. For extra smoky flavor, add smoked paprika or chipotle powder to seasoning.
