A quick and easy side dish featuring caramelized honey roasted carrots topped with tangy, creamy goat cheese, perfect for busy weeknights or special gatherings.

  • 1 pound (450 grams) medium carrots, peeled and cut into sticks
  • 2 tablespoons honey (mild, floral like clover or wildflower)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • 3 ounces (85 grams) goat cheese, crumbled or in small dollops
  • Optional: lemon zest for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to reach temperature before roasting.
  2. Peel and cut carrots into sticks about 3 inches long and ½ inch thick; halve or quarter if very thick.
  3. In a large bowl, whisk together olive oil, honey, minced garlic, thyme, salt, and pepper.
  4. Add carrot sticks to the bowl and toss thoroughly to coat each piece with the honey-olive oil mixture.
  5. Spread the carrots in a single layer on a parchment-lined baking sheet, leaving space between pieces.
  6. Roast in the oven for 25-30 minutes, stirring or flipping halfway through (around 15 minutes), until tender with golden, slightly crisp edges.
  7. Check doneness; carrots should be fork-tender but still have a bit of bite. Add 5 more minutes if softer carrots are desired.
  8. Remove from oven and while still warm, dollop with creamy goat cheese and optionally sprinkle lemon zest on top.
  9. Serve warm for best flavor and texture.

Notes

Use uniform carrot cuts for even roasting. Do not overcrowd the baking sheet to avoid steaming. Add goat cheese off-heat to keep creamy texture. Warm thick or crystallized honey before mixing for easier coating. For a crunch, sprinkle toasted walnuts or pecans before serving. Avoid broiling as carrots can burn quickly.
