A hearty and healthy dinner featuring smoky grilled chicken, creamy street corn topping, and fluffy rice, perfect for busy weeknights or meal prep.

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Chili powder
  • Paprika
  • Garlic powder
  • Salt
  • Cooked white or brown rice (or cauliflower rice)
  • Sweet corn kernels, grilled or canned
  • Mayonnaise (or Greek yogurt)
  • Crumbled cotija cheese
  • Fresh lime juice
  • Chopped cilantro
  • Diced avocado
  • Fresh lime wedges
  • Hot sauce or sriracha (optional)

Instructions

  1. Cook the rice according to package instructions. Fluff with a fork and set aside.
  2. Mix chili powder, paprika, garlic powder, and salt in a small bowl. Rub the mixture evenly over the chicken.
  3. Heat a skillet or grill pan over medium-high heat. Add olive oil and cook the chicken for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Let rest for 5 minutes before slicing.
  4. In a mixing bowl, combine grilled corn kernels, mayonnaise, crumbled cotija cheese, chili powder, fresh lime juice, and chopped cilantro. Stir until well coated.
  5. Divide the cooked rice into serving bowls. Top each bowl with sliced chicken and a generous scoop of the street corn topping.
  6. Garnish with diced avocado, lime wedges, extra cilantro, and a drizzle of hot sauce if desired.

Notes

For extra flavor, grill the corn alongside the chicken. Let the chicken rest after cooking to retain its juices.
