Ingredients

Scale
  • 1 pound ground turkey (preferably 93% lean)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 large egg, room temperature
  • 1/4 cup breadcrumbs (use gluten-free if needed)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for cooking)
  • 2 large sweet potatoes, peeled and cut into 1/4-inch thick fries
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Optional toppings and buns: whole wheat or brioche burger buns, leafy lettuce or arugula, tomato slices, red onion rings, cheese (Swiss, cheddar, or pepper jack), condiments like Dijon mustard, mayo, …

Instructions

  1. Preheat oven to 425°F (220°C). Peel and cut sweet potatoes into 1/4-inch thick fries.
  2. Toss fries in a large bowl with cornstarch, shaking off excess. Add olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well to coat evenly.
  3. Spread fries in a single layer on a baking sheet lined with parchment paper or a wire rack. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  4. In a large bowl, combine ground turkey, grated onion, minced garlic, egg, breadcrumbs, parsley, smoked paprika, cumin, salt, and pepper. Mix gently until just combined.
  5. Divide mixture into 4 equal portions and form each into a 4-inch diameter patty about 3/4-inch thick. Press a slight indentation in the center of each patty with your thumb.
  6. Heat olive oil in a skillet or grill pan over medium-high heat. Cook patties for 5-6 minutes on the first side without moving them, then flip and cook for another 4-5 minutes until internal temperature reaches 165°F (74°C). If using cheese, add a slice during the last minute and cover to melt.
  7. Toast buns lightly in a dry skillet or oven. Assemble burgers with lettuce, turkey patty, tomato slices, onion rings, and preferred condiments. Top with the other bun half.
  8. Serve burgers with crispy sweet potato fries. Optionally add dipping sauces like garlic aioli or chipotle mayo.

Notes

Use finely grated onion to keep burgers moist and avoid over-mixing the meat to prevent toughness. Press a thumb indentation in patties to prevent puffing. Toss fries in cornstarch for crispiness and avoid overcrowding the baking sheet. Use a meat thermometer to ensure burgers reach 165°F (74°C). For gluten-free, substitute breadcrumbs and buns accordingly. Fries can be baked on a wire rack for extra crispiness.
