  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup low-fat feta cheese, crumbled
  • 2 stalks green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon olive oil (for greasing muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease each cup of a 12-cup muffin tin with olive oil or non-stick spray.
  2. Chop the spinach finely, halve the cherry tomatoes, slice the green onions, and crumble the feta cheese. Set aside in a mixing bowl.
  3. Separate the egg whites from the yolks, ensuring no yolk contaminates the whites.
  4. Using an electric mixer, beat the egg whites on medium-high speed until soft peaks form (3-5 minutes).
  5. Gently fold the spinach, tomatoes, green onions, feta, garlic powder, salt, and pepper into the whipped egg whites using a spatula, being careful not to deflate the mixture.
  6. Divide the mixture evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes until muffins are set and lightly golden on top. Test doneness with a toothpick; it should come out clean.
  8. Let the muffins cool in the tin for 5 minutes, then run a knife around the edges and transfer to a wire rack to cool completely or serve warm.
