Instructions

  1. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.
  2. In a separate bowl, whisk buttermilk, egg, melted butter, red food coloring, vanilla extract, and white vinegar until smooth.
  3. Slowly pour the wet ingredients into the dry ingredients, folding gently with a spatula until just combined. Do not overmix; batter should be thick with a few small lumps.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup batter per pancake onto the skillet. Cook 2-3 minutes until bubbles form on the surface and edges look set. Flip and cook another 1-2 minutes until cooked through and slightly springy.
  6. Keep cooked pancakes warm in a low oven (200°F/95°C) while finishing the batch.
  7. To make the cream cheese syrup, beat softened cream cheese with powdered sugar until smooth. Slowly add milk and vanilla extract, beating until silky and pourable. Adjust milk for desired consistency and add a pinch of salt if desired.
  8. Serve pancakes stacked and generously drizzled with cream cheese syrup. Optionally, garnish with fresh berries or chopped nuts.
