  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen or canned corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
  • 2 cups shredded Mexican cheese blend
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup sliced green onions (optional)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine cream cheese, sour cream, and mayonnaise. Beat together until smooth and fluffy, about 2-3 minutes.
  3. In a large skillet, cook ground beef or turkey over medium-high heat until fully browned, about 6-8 minutes. Drain excess fat.
  4. Add taco seasoning and 1/4 cup water to the meat. Stir and simmer for 2 minutes until thickened.
  5. Add black beans, corn, and diced tomatoes with green chilies to the skillet. Stir to combine and cook for another 2 minutes to heat through. Simmer off excess liquid if needed.
  6. Spread the creamy base evenly into the bottom of an oven-safe baking dish.
  7. Spoon the meat and veggie mixture over the creamy base in an even layer.
  8. Sprinkle shredded cheese over the top.
  9. Add sliced black olives, green onions, and cilantro (if using) as toppings.
  10. Bake uncovered for 20-22 minutes, until cheese is melted and bubbly and edges are lightly browned. For a more golden top, broil for 2-3 minutes at the end, watching closely.
  11. Let cool for 5-10 minutes before serving. Serve hot with tortilla chips, pita wedges, or crunchy veggie sticks.

Notes

For a vegetarian version, omit the meat and double the beans and veggies. Adjust spice level by using mild or spicy taco seasoning and adding jalapeños if desired.
