  • 1 tablespoon Worcestershire sauce
  • 1/2 cup beef broth
  • Salt and black pepper, to taste
  • 4 burger buns (brioche or sturdy rolls recommended)
  • 4 slices provolone or Swiss cheese (cheddar or mozzarella optional)
  • 2 tablespoons butter (for toasting buns)
  • Fresh parsley, chopped (optional, for garnish)
  • Extra sautéed onions (optional)
  • Hot sauce or Dijon mustard (optional)

Instructions

  1. Heat 2 tablespoons unsalted butter and 1 tablespoon olive oil in a large skillet over medium-low heat.
  2. Add sliced onions and a pinch of salt. Stir every couple of minutes.
  3. Cook for 15-20 minutes, until onions are golden brown and jammy. Add a splash of water if they start sticking.
  4. Increase heat to medium. Add ground beef to the onions.
  5. Break up the meat with a spoon and cook until browned, about 5 minutes. Drain excess fat if needed.
  6. Add minced garlic and cook for 1 minute, until fragrant.
  7. Sprinkle in thyme, Worcestershire sauce, and beef broth. Season with salt and pepper.
  8. Simmer for 3-5 minutes, stirring often, until the mixture thickens slightly.
  9. While the meat simmers, melt 2 tablespoons butter in a separate pan or on a baking sheet in the oven (350°F).
  10. Toast the buns until golden and crisp.
  11. Place a toasted bun bottom on a plate. Spoon on a generous heap of the beef onion mixture.
  12. Top with a slice of cheese.
  13. Add bun top, press gently, and garnish with fresh parsley or extra onions if desired.
