  • 1 tablespoon olive oil (extra virgin preferred)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons taco seasoning (chili powder, cumin, smoked paprika, oregano, cayenne)
  • 1 tablespoon tomato paste
  • Juice of 1 lime
  • Salt and pepper to taste
  • 8 large butter lettuce leaves, washed and dried
  • Optional toppings: shredded cheddar or Monterey Jack cheese, chopped fresh cilantro, diced avocado or guacamole, fresh diced tomatoes or pico de gallo, plain Greek yogurt or sour cream

Instructions

  1. Rinse the butter lettuce leaves gently under cold water. Pat dry with paper towels or use a salad spinner. Set aside on a plate lined with a towel to keep them dry and crisp.
  2. Place a large skillet over medium heat and add 1 tablespoon of olive oil. Let it warm for about 1 minute until shimmering but not smoking.
  3. Add the finely chopped onion to the skillet. Cook, stirring occasionally, until translucent and soft—about 4 to 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add 1 pound (450 grams) of ground turkey to the skillet. Break it up with a wooden spoon or spatula. Cook until no longer pink, about 7-8 minutes, stirring occasionally to brown evenly.
  5. Sprinkle in 2 teaspoons of taco seasoning and stir well to coat the turkey. Add 1 tablespoon of tomato paste, mixing thoroughly. Let it cook for another 2 minutes so the flavors meld together.
  6. Squeeze fresh juice from 1 lime over the cooked turkey mixture. Stir and taste, adding salt and pepper as needed.
  7. Spoon the warm turkey mixture into each lettuce leaf. Top with optional shredded cheese, diced avocado, fresh cilantro, and a dollop of Greek yogurt if desired.
  8. Serve immediately for maximum crunch and flavor.

If the turkey mixture feels dry, add a splash of water or chicken broth while cooking to keep it juicy. Avoid overfilling the lettuce leaves to prevent tearing.
