  • 4 cups (600 grams) seedless watermelon, cubed
  • 3 tablespoons (45 ml) fresh lime juice (from 2 large limes)
  • 1012 fresh mint leaves, plus extra for garnish
  • 1 cup (240 ml) cold water
  • 12 tablespoons (1530 grams) agave syrup or honey (optional)
  • Ice cubes as needed for serving

Instructions

  1. Cut about 4 cups (600 g) of seedless watermelon into cubes, removing seeds if present.
  2. Place watermelon cubes into a blender and add 1 cup (240 ml) cold water. Blend on high speed for 1-2 minutes until smooth.
  3. Optional: Pour blended watermelon through a fine mesh strainer into a pitcher, pressing pulp to extract juice for a smooth texture.
  4. Add fresh lime juice and gently bruise 10-12 mint leaves, stirring them into the juice. Let sit for 5-10 minutes to infuse flavor.
  5. Sweeten to taste with 1-2 tablespoons agave syrup or honey, stirring until dissolved. Adjust lime or sweetener as needed.
  6. Add ice cubes to glasses or pitcher, pour juice over ice, garnish with mint leaves or lime slices, and serve immediately.

Notes

Use ripe, seedless watermelon for best sweetness and smooth texture. Straining is optional but recommended for a silky finish. Bruise mint leaves gently to release oils without bitterness. Adjust sweetness and lime to taste. Keep the drink chilled and serve over ice. Leftover juice can be stored in the refrigerator for up to 2 days.
