Fresh Watermelon Feta Mint Salad

A light and refreshing summer salad combining juicy watermelon, tangy feta cheese, and fresh mint with a zesty lime dressing. Perfect as a quick side dish for warm days.

  • 4 cups watermelon, cubed (seedless, ripe)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or agave syrup (optional)
  • Pinch of freshly ground black pepper
  • Light sprinkle of sea salt, to taste

Instructions

  1. Cut off the rind and remove any seeds from the watermelon. Cube into roughly 1-inch pieces (about 4 cups) and place in a large bowl.
  2. In a small bowl, whisk together extra virgin olive oil, fresh lime juice, honey (if using), sea salt, and freshly ground black pepper. Adjust seasoning to taste.
  3. Crumble feta cheese over the watermelon gently, avoiding mashing it.
  4. Roughly chop fresh mint leaves and sprinkle over the salad.
  5. Gently fold all ingredients together using a wooden spoon or spatula, coating the watermelon and feta evenly with the dressing and distributing the mint throughout.
  6. Chill the salad in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

If watermelon is very juicy, drain excess liquid before tossing to avoid a watery salad. Use fresh lime juice for best flavor. Handle feta gently to prevent it from becoming mushy. Chop mint fresh just before mixing to maintain brightness. Add dressing just before serving to keep salad fresh.
