  • 1/2 cup chocolate chips or chunks (90g), optional

Instructions

  1. Preheat oven to 350°F (175°C) and position rack in the center.
  2. Line an 8×8 inch baking pan with parchment paper or grease with avocado oil or butter.
  3. Mash the ripe avocado in a large bowl until smooth and creamy.
  4. Add granulated sugar, brown sugar, and vanilla extract to the mashed avocado. Beat in eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt until no clumps remain.
  6. Gradually fold dry ingredients into wet mixture with a spatula until just combined; do not overmix.
  7. Fold in chocolate chips or chunks evenly.
  8. Spread batter evenly in prepared pan and tap gently to release air bubbles.
  9. Bake for 22-26 minutes, checking at 22 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  10. Cool brownies completely in the pan on a wire rack for 30-40 minutes before cutting.
  11. If centers are too soft after cooling, refrigerate for 15-20 minutes before slicing.
