Garlic Butter Beef Bites with Potatoes

This easy dump-and-go dinner features juicy beef sirloin bites and crispy baby potatoes roasted in a rich garlic butter sauce. Perfect for busy weeknights, it’s a comforting, crowd-pleasing meal with minimal prep and cleanup.

  • 1 1/2 lbs beef sirloin, cut into 1-inch cubes
  • 1 1/2 lbs baby potatoes, quartered (Yukon Gold or red potatoes preferred)
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or Italian seasoning (optional)
  • 5 tbsp unsalted butter, melted
  • 5 garlic cloves, minced or grated
  • 1 tbsp fresh parsley, chopped (for garnish)
  • 1/2 tsp crushed red pepper flakes (optional)
  • Juice of 1/2 lemon (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Wash and quarter the potatoes. Trim and cube the beef. Mince garlic and chop parsley.
  2. In a large mixing bowl, toss beef cubes and potatoes with olive oil, salt, pepper, smoked paprika, and dried thyme or Italian seasoning until evenly coated.
  3. Line a large baking sheet with parchment paper or foil. Spread beef and potatoes in a single layer, leaving space between pieces.
  4. In a small bowl, melt butter and stir in minced garlic, red pepper flakes (if using), and lemon juice (if using).
  5. Roast beef and potatoes for 20 minutes. At the 10-minute mark, use a spatula or tongs to turn pieces for even cooking.
  6. After 20 minutes, drizzle garlic butter sauce over beef and potatoes. Toss gently to coat. Return to oven for another 10-15 minutes, until beef is browned and potatoes are crispy-tender.
  7. Check for doneness: beef should be cooked through but juicy (145°F for medium rare, 160°F for well done); potatoes should be fork-tender and golden.
  8. Remove from oven, sprinkle with chopped parsley, and add a squeeze of lemon if desired. Let rest a couple minutes before serving.

Notes

For extra flavor, marinate beef in half the garlic butter for 30 minutes before roasting. If potatoes brown faster than beef, tent loosely with foil. You can swap beef for chicken or tofu, and add other veggies like carrots or zucchini. For dairy-free, use plant-based butter or olive oil. Leftovers store well and taste even better the next day.
