  • 1 ½ lbs beef steak, thinly sliced (sirloin or flank)
  • 2 tbsp unsalted butter (plus more for tortillas)
  • 5 cloves garlic, minced
  • ½ cup honey
  • ¾ cup BBQ sauce (smoky, tangy variety recommended)
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 810 small flour tortillas (or corn tortillas)
  • 1 tbsp unsalted butter, melted (for brushing tortillas)
  • ½ cup shredded lettuce
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream
  • ¼ cup diced red onion
  • ¼ cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Place beef in the freezer for 20 minutes to make slicing easier. Slice into thin strips (about ¼ inch thick).
  2. In a large skillet over medium heat, melt 2 tablespoons butter. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add beef strips to the skillet. Increase heat to medium-high and sear for 2-3 minutes until beef starts to brown, stirring frequently.
  4. Lower heat to medium. Add honey, BBQ sauce, soy sauce, smoked paprika, black pepper, and salt. Stir until beef is coated and sauce starts to bubble, about 3 minutes.
  5. Let beef and sauce simmer for 5-7 minutes until sauce reduces and becomes glossy. If too thick, add 1-2 tablespoons water. Taste and adjust seasoning.
  6. While beef simmers, melt 1 tablespoon butter. Brush each tortilla lightly with melted butter. Warm tortillas in a dry skillet over medium heat for 30 seconds per side until soft and lightly golden.
  7. Prep toppings: shred lettuce, grate cheese, dice onions, and chop cilantro. Place toppings in small bowls.
  8. Place warm tortillas on a serving platter. Spoon beef filling into each tortilla. Top with lettuce, cheese, onions, cilantro, and sour cream. Squeeze lime wedge over each taco.
  9. Serve immediately while hot. For parties, keep beef warm on low heat and let guests assemble their own tacos.

Notes

For gluten-free, use GF tortillas and tamari instead of soy sauce. For dairy-free, use vegan butter and cheese. Sear beef quickly for tenderness; don’t overcook. Prep toppings ahead for easy assembly. Sauce thickness can be adjusted with water. Customize toppings to taste.
