  • 6 tablespoons unsalted butter, softened

Instructions

  1. Activate the yeast by combining 1 cup warm water, 2 tablespoons sugar, and 2 ¼ teaspoons active dry yeast in a large mixing bowl. Stir gently and let sit for 5-10 minutes until foamy.
  2. Add 3 cups all-purpose flour, 1 teaspoon salt, and 2 tablespoons olive oil to the yeast mixture. Mix until it starts to come together, then turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  3. Lightly oil a clean bowl, place the dough inside, cover with a kitchen towel or plastic wrap, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  5. Prepare the herb butter by mixing 6 tablespoons softened unsalted butter, 3 minced garlic cloves, chopped parsley, rosemary, thyme, ½ teaspoon salt, and optional red pepper flakes in a bowl. Set aside.
  6. Punch down the risen dough and turn it out onto a floured surface. Divide into 12 equal pieces (about 2 oz / 57g each). Roll each piece into a 10-inch rope and tie into a loose knot. Place knots evenly spaced on the prepared baking sheet.
