  • 1 teaspoon salt
  • 4 cloves fresh garlic, minced finely

  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat 2 lbs (900 g) of chicken wings completely dry with paper towels. In a large bowl, toss wings with 1 tablespoon baking powder and 1 teaspoon salt until evenly coated.
  3. Place the coated wings on the wire rack in a single layer, leaving space between each wing for air circulation. Drizzle 1 tablespoon olive oil over the wings or brush lightly to coat.
  4. Bake the wings for 35-40 minutes, flipping halfway through (around 20 minutes) to ensure even crispness. Wings should be golden brown and crispy when done.
  5. While wings bake, melt 3 tablespoons unsalted butter in a small pan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  6. Remove from heat and stir in ½ cup freshly grated parmesan cheese, 2 tablespoons chopped fresh parsley, ½ teaspoon black pepper, and 1 teaspoon lemon juice if using.
  7. Transfer baked wings to a large bowl. Pour the garlic parmesan sauce over the hot wings and toss gently with tongs until fully coated.
  8. Serve immediately, garnished with extra parsley or parmesan if desired.
