  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chicken or vegetable broth (low sodium preferred)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the potatoes into 2-3 inch wedges, leaving the skin on.
  3. In a large mixing bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper until well combined.
  4. Toss the potato wedges in the marinade until thoroughly coated. Let them sit for 10 minutes if possible to absorb flavors.
  5. Transfer the potatoes to a large baking dish or roasting pan in a single layer. Pour the chicken or vegetable broth over the potatoes.
  6. Roast in the oven for 20 minutes.
  7. Remove the pan and gently turn the potatoes with a spatula or tongs to ensure even browning and flavor absorption.
  8. Return to the oven and roast for another 20-25 minutes until potatoes are golden and tender. Add a splash of water or broth if liquid evaporates too quickly.
  9. Remove from oven and let the potatoes rest for 5 minutes before serving.
  10. Optional: For extra crispiness, broil the potatoes for 2-3 minutes at the end, watching carefully to prevent burning.
